Hi Robin,
If your daughter has a rice allergy but wants to enjoy sushi, here are some great alternatives to sushi rice:

Quinoa – Slightly nutty and sticky enough to hold together in sushi rolls.

Millet – Has a mild flavor and can be slightly sticky when cooked properly.

Couscous – Though not sticky, it works well in sushi bowls.

Cauliflower Rice – A low-carb alternative that can mimic sushi rice when lightly steamed and mixed with rice vinegar.

Sweet Potato Mash – Provides a soft, slightly sweet base for sushi rolls.

Mashed Avocado – Can be spread inside sushi rolls for a creamy texture.

Haiga-mai is an excellent rice. It's brown rice with the bran removed so it's half-milled with the germ intact and works well for sushi rice. One of my favorites!

In reply to Erik Rochelmeyer.

Erik,
Actually no. The stickiness is often caused of the amount of sugar within the rice variety itself. Thus, why most of the seasoned sushi rice are added with extra sugar to hold well together.
The longer you cook your rice (with extra water added in), they'll be mushier and eventually become porridge, or if you don't add liquid, it'll be drier.

In reply to Carolyn Riddle.

Hi Carolyn,
Of course sushi rice is the best when it comes to sushi. But other rice would work as well in case you're needing substitution. Though you have to adjust the amount of water when cooking, plus generally add and warm more sugar along with vinegar to the mixture. The later step will generally help to increase the stickiness. Also, keep your rice warm at all time when rolling and definitely wrap your roll in plastic wrap or similar if you're not consuming rightaway. If it's too dry, it will not stick.
