No matter which types of sushi
you like, whether it's maki rolls, nigiri, onigiri, etc. the heart of all these Japanese dishes is the rice. The perfect sushi rice will be mildly sweet, scent and a bit sticky
Metal container/tray will affect the rice taste when mix with vinegar, so avoid that
For sushi, rinse the rice throughout, for other purpose, you don't have to
Cover the cooked rice with damp towel to reserve its necessary moisture level. The best sushi rice should be a bit sticky but not smushy or wet.
If you eat sushi a lot, consider buying an electric rice cooker to save time/energy while cooking.
