Recipe for Creamy Paleo kale soup with Chicken
Healthy Paleo kale soup with tomato and carrots. Ground cauliflower was added for more creamy and thicker soup

- 1 lb chicken
- 4 shallots chopped
- 3 carrots sliced
- 1 lb tomatoes
- 5 cups unsalted chicken stock
- 1 ½ cup cauliflower
- 4 cups kale
- 2 tbsp avocado oil
- salt and ground pepper
With your blender/food processor, grind chicken and cauliflower in separate procedure
Spray some avocado oil in saucepan over high heat.
Add crushed and diced shallot and stir till soften and giving off aroma.
Add ground chicken, stir till golden then add chop carrot and diced tomatoes.
Add the chicken stock, wait until boil, then reduce heat to medium.
Season with salt and pepper to taste.
When veggies are soft enough, stir in the Kale and grind cauliflower.
Reduce heat to simmering, cover and cook for 20 minutes.
Enjoy your soup while it's hot
