Yes, “Su” is just the Japanese for Vinegarred-rice. Typically, most sushi rice will be seasoned with a mixture of rice vinegar and sugar to enhance the flaovr and stickiness.

Hi Din,
I usually use rice vinegar for the rice. Though some time to change the flavor I’d use Apple Cider vinegar as well to have a bit of fruity hint.
